Sugar-Free Coffee Toffee Pecan Mug Muffin | SweetLeaf®


  • 1/2 tsp. SweetLeaf® Liquid Stevia English Toffee Sweet Drops™
  • 1 egg
  • 2 Tbsp. coconut flour
  • 1/4 tsp. baking powder
  • 1 tsp. coffee extract
  • 1/4 tsp. cinnamon, ground
  • 3 Tbsp. of strong brewed coffee, cooled
  • 1/2 tsp. maple extract
  • 1 Tbsp. pecans, chopped
  • Pinch of salt
  • Optional Toffee Drizzle
  • 1/8 tsp. SweetLeaf® Liquid Stevia English Toffee Sweet Drops™
  • 1 Tbsp. canned coconut milk, “cream” at top of can
  • 1 tsp. canned coconut milk, “liquid” at bottom of can
  • 1/4 tsp. vanilla extract
  • 1/8 tsp. salt
  • Optional
  • Chopped pecans for topping
  • Directions

    Whisk all muffin ingredients together well. Grease a 7-ounce ramekin with olive oil cooking spray or coconut oil. Pour batter into dish. Microwave for 1 minute and 30 seconds. Poke muffin in the center with a toothpick to see if it comes out clean. May need 30 seconds more depending on microwave. This could also be baked at 350°F for 15-20 minutes. Once cooled enjoy right from the dish, or if desired, remove onto a plate and add optional toffee drizzle. Just mix together drizzle ingredients, taste, and adjust sweetness as needed. Then add chopped pecans.
