Spring Roll Salad with Sweet Peanut Dressing | SweetLeaf®

Ingredients

Sweet Peanut Dressing
  • 1 Tbsp. SweetLeaf® Stevia Sweetener
  • 1/3 cup avocado oil
  • 2 Tbsp. coconut aminos or soy sauce
  • 1/4 cup apple cider vinegar
  • 2 tsp. garlic, minced
  • 1/3 cup peanut butter, unsweetened
  • Spring Roll Salad
  • 2 cups cabbage, shredded
  • 2 cups zucchini, shredded
  • 1 cup cucumber, sliced
  • 1/2 cup sweet pepper, sliced
  • 1/2 cup carrot, shredded
  • 2 cups cooked chicken breast, shredded
  • 1/3 cup scallions
  • Optional
  • Fresh cilantro, chopped
  • Directions

    Place all the ingredients for the salad into a large serving bowl or platter.

    Blend the dressing ingredients in a blender on the highest setting, until smooth. Taste and adjust sweetener if needed.

    Toss dressing with salad and serve immediately. Keep refrigerated.
