Pumpkin Bread | SweetLeaf®


  • 24 packets SweetLeaf® Organic Stevia Sweetener
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • 1/2 tsp. salt
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. ground cloves
  • Directions

    Preheat oven to 350 degrees F. Line a standard-sized loaf pan with tin foil.

    Combine the pumpkin, eggs, oil, and vanilla. Add stevia and mix well. Separately combine the flour, salt, baking soda, baking powder, and spices. Add to the wet ingredients and mix just until combined.

    Pour into the loaf pan and bake for about 45 minutes or until a toothpick comes out clean. Allow to cool before removing from pan. The tin foil will peel right off.

    Recipe Notes

    This recipe also makes one dozen muffins. Simply prepare ingredients following the above mixing directions, but pour into a muffin pan. Then, bake at 375 degrees F for 20 minutes.
