Low-Sugar Chocolate Almond Fudge Cookies | SweetLeaf®


  • 1/2 tsp SweetLeaf® Organic Stevia Extract
  • 1 tsp. SweetLeaf® Liquid Stevia Chocolate Sweet Drops™
  • 1/3 cup cocoa powder, unsweetened
  • 1/4 tsp. salt
  • 2 eggs
  • 1/2 cup butter, unsalted, room temperature
  • 1/2 cup almond butter, no sugar added
  • 1 tsp. almond extract
  • Frosting
  • 1 tsp. SweetLeaf® Liquid Stevia Chocolate Sweet Drops™
  • 1/4 cup heavy cream
  • 1/4 cup cocoa powder, unsweetened
  • 1/2 tsp. almond extract
  • Optional Topping
  • Slivered almonds
  • Directions

    Preheat oven to 375 degrees F.

    Line a cookie sheet with a non-stick baking mat or parchment paper. Whisk the first three ingredients together and set aside. To a stand mixer, add the remaining ingredients and mix on medium until smooth. Add the dry mixture to the wet and blend until combined well. Use a small cookie scoop and place cookie batter on baking sheet. Bake for 12 minutes. Allow to cool completely before frosting.

    To make frosting, simply place ingredients in a microwavable bowl and microwave for 20 seconds. Whisk until smooth and pour or spread over each cooled cookie. Top with a few slivered almonds, if desired.
