Ingredients

Shrimp Marinade
  • 1/2 tsp. SweetLeaf® Liquid Stevia Valencia Orange Sweet Drops™
  • 1 lb. raw shrimp, peeled and deveined
  • 2 limes, juiced and zested
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • Roasted Cashew Topping
  • 1 Tbsp. extra-virgin olive oil
  • 1/4 cup raw cashews, roughly chopped
  • 2 tsp. yellow mustard seeds
  • 1/4 tsp. kosher salt
  • Curry
  • 1/2 tsp. SweetLeaf® Liquid Stevia Coconut Sweet Drops™
  • 1/2 tsp. SweetLeaf® Liquid Stevia Valencia Orange Sweet Drops™
  • 1 Tbsp. extra-virgin olive oil
  • 1/2 medium yellow onion, diced
  • 4 garlic cloves, peeled and minced
  • 2 1/2 tsp. mild curry powder
  • 3/4 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 2 cups unsweetened almond coconut milk
  • 5 large fresh basil leaves, finely chopped
  • 1 lime, juiced and zested
  • 1 lb. cauliflower florets
  • 3 oz. fresh baby spinach
  • 4 cups brown rice, cooked
  • Directions

    Shrimp Marinade

    In a mixing bowl, combine all ingredients and mix to combine, making sure that the shrimp are evenly coated.

    Roasted Cashew Topping

    Heat the olive oil in a small skillet over medium heat. Add the cashews and mustard seeds and cook, stirring frequently, until the nuts and seeds are fragrant and lightly browned. Immediately transfer mixture to a small bowl and serve on top of the coconut curry shrimp.

    Curry

    Heat the olive oil in a large skillet on medium-low heat. Add the minced garlic and diced onion and cook until soft and translucent, stirring often. Add the curry powder, salt, and pepper and mix to thoroughly combine.

    Add the almond coconut milk, basil, lime juice and zest, Sweet Drops™, and cauliflower florets and mix to combine. Bring the mixture to a boil over medium high heat. Cover and reduce the heat to simmer until the cauliflower is tender, about 10-12 minutes.

    Add the marinated shrimp and continue to simmer for 3 minutes. Turn off the heat and gently fold in the spinach leaves. Serve with brown rice and top with the roasted cashew mixture.
