Chocolate Date Bars | SweetLeaf®

Ingredients

  • 1/4 cup SugarLeaf®
  • 1 cup Medjool dates, pitted
  • 1/2 cup apple juice
  • 4 eggs
  • 1/4 cup coconut oil (or butter)
  • 1 Tbsp. vanilla extract
  • 2 Tbsp. cocoa powder, unsweetened
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 cup chocolate chips, semi-sweet
  • Directions

    Preheat the oven to 350 degrees F and grease an 8-inch square baking dish.

    Place dates and apple juice in a saucepan over medium heat and simmer for 10 minutes until dates plump.

    Place eggs, oil (or butter), vanilla and SugarLeaf in a food processor or blender and pulse until combined. Add in cocoa, salt, and baking soda and pulse again to combine. Add the dates and remaining apple juice to the food processor and pulse until combined. Lastly, add the chocolate chips and pulse again until combined (they will melt a bit).

    Pour mixture into greased baking dish and place into the oven to bake for 25 to 30 minutes or until the center is firm. Cool and serve.
