Ingredients

  • 4 egg whites
  • 2 eggs
  • 2½ Tbsp. almond flour
  • 2½ Tbsp. brown rice flour
  • 2 tsp. fat-free milk powder
  • 1 Tbsp. vanilla extract
  • 1 tsp. lemon flavor
  • 1 Tbsp. SweetLeaf® Stevia Sweetener Shaker
  • 4 Tbsp. carrots, shredded
  • Dash of baking powder
  • Dash of sea salt
  • Directions

    Preheat oven to 350 degrees.

    Mix all ingredients except for the egg whites. Whip the egg whites and fold them slowly into the mix.

    Spray the muffin mold with coconut oil and pour the mix.

    Bake for 30 minutes.
