Spring roll salad with sweet peanut dressing

Ingredients

 

Sweet Peanut Dressing

1 tbsp Organic Stevia Sweetener, 70 packets

1/3 cup avocado oil

2 tbsp coconut aminos or soy sauce

¼ cup apple cider vinegar

2 tsp garlic, minced

1/3 cup peanut butter, unsweetened

 

Spring Roll Salad

2 cups cabbage, shredded

2 cups zucchini, shredded

1 cup cucumber, sliced

½ cup sweet pepper, sliced

½ cup carrot, shredded

2 cups cooked chicken breast, shredded

1/3 cup scallions

Directions

Place all the ingredients for the salad into a large serving bowl or platter.

Blend the dressing ingredients in a blender on the highest setting, until smooth. Taste and adjust sweetener if needed.

Toss dressing with salad and serve immediately. Keep refrigerated.
